Zoodles are just noodles made out of vegetables. 🙂
We eat them here made from zucchini, yellow squash, sweet potatoes, carrots and more.
They come out in beautiful, rounded ribbons and can be eaten in so many ways.
These can be:
* Eaten raw with a little salt and pepper.
* Tossed in a skillet and heated for a couple of minutes with some seasonings and a spray of oil, dot of butter or teaspoon of coconut oil.
* Used in place of noodles for vegan or regular alfredo.
Lastly for the above list but far from least is my favorite way. I like having a big bowl of the fresh zoodles with a raw pasta sauce. The last recipe I used was delicious! The sauce was: “Creamy carrot dill sauce” and was found on the Fragrant Vanilla Cake blog.
A similar way was a huge hit this past weekend. We brought a jar of butternut squash pasta sauce from Aldi’s and put this on top our bowls of zoodles. My niece LOVED this and called my daughter to try it and we all stopped talking just to eat and enjoy every bite. Minutes to make and SO good!
